To help with the transition back to our busy schedules, we thought we'd provide you some exciting recipe ideas to spice up your day, whether you're on the go or laying low. Let yourself indulge in the new Light Blue Cheese, Light Queso Fresco & Chipotle, and Light Mozzarella, Sun-Dried Tomato & Basil Wedge flavors for a satisfying snack or as part of a light lunch! What a Pearing!
MAKES 1 SERVING

Ingredients:
1/2 English muffin
1 Light Blue Cheese wedge
3-4 walnut halves
2-3 pear slices

Directions:
Toast English muffin. Spread cheese over English muffin. Top with walnuts and pears.

PER SERVING: 172 calories, 6.6g fat, 581mg sodium, 22.3g carbs, 2.9g fiber, 6.5g sugar, 5.7g protein

MAKES 1 SERVING

Ingredients:
1 celery stalk
2 Light Queso Fresco & Chipotle wedges
2 tablespoons bacon bits
Handful of grape or cherry tomatoes, optional

Directions:
Cut celery stalk in half. Fill with cheese and top with bacon bits. Serve with grape tomatoes, if desired.

PER SERVING: 150 calories, 6.6g fat, 762mg sodium, 10.6g carbs, 2.4g fiber, 2.7g sugar, 9.1g protein

CLT

C.L.T. (Cheese, Lettuce & Tomato) Pockets
MAKES 1 SERVING

Ingredients:
2 mini pita pockets
2 Light Mozzarella, Sun-Dried Tomato & Basil wedges
3-4 grape or cherry tomatoes, halved
1 leaf lettuce, torn into pieces

Directions:
Cut pita pockets in half and fill with remaining ingredients.

PER SERVING: 158 calories, 4.4g fat, 593mg sodium, 21.9g carbs, 1.3g fiber, 3.8g sugar, 7g protein

Laughing Away the Day with Colleagues

For our last summer outing in August, the Laughing Cow team met many of our friends from cyberspace! We participated in a conference, BlogHer '10, where bloggers from all around came together to learn, socialize (in person), and meet the brands and consumers that support them — like us! Throughout the conference we conducted a special “Play for Laughs” contest, which allowed us to meet in person many of the folks that are our strongest champions. We took humorous photos of visitors unwrapping, enjoying and sharing yummy Laughing Cow Wedges and Mini Babybels, which we printed out just as fast as we snapped them. We posted the pics on our booth's wall of photos.
